Eating Healthy - Berry Good Smoothie

I know you are anxiously waiting my Clarksburg race report. I was hoping to post it with photos from the event but they are not available yet. Anyway, I will post it tonight sans photos.

In the meantime I have another yummy snack to share with you! This is actually the recipe for the smoothie Safeway was serving at Nike Women’s Expo. I am never very good when it comes to making smoothies – I know, I know, they are probably one of the easiest things to make but for some reason mine either end up too runny or too think. I also really liked the mix of fruit in this one.

Berry Good Smoothie
3 cups pomegranate cranberry juice
6 oz peach yogurt
1 cup frozen raspberries
1 cup frozen blueberries
2 cups frozen peaches

Throw it all in a blender, blend, and enjoy! Makes 4 servings.

(I froze the rest for easy to grab snacks for the rest of the week.)

I know I am weird for eating it out of a bowl but it feels more like a meal that way - or even like eating ice cream, frozen yogurt or sobet. Happy snacking!

  1. Yumm. Sounds good. I took a break from smoothies for a while, but I'm back on the wagon now. I'll have to try this one. I do think it's weird that you eat it out of a bowl...but also clever!

  2. Yum! I'm so impressed that you eat yogurt now!

Have you ever tried a "green" smoothie? I've only tried it with spinach. It turns the smoothie a nasty shade of gray but it still tastes just like fruit. You can add a handful of spinach to any smoothie. There is a whole website of recipes if you google "green smoothie." Most of them sound gross to me but some people love em.

I've been trying to make breakfast the night before so I have something to eat when I get to work. Since I'm usually starving since I've been on the AM workout train! YEAH!

  3. Hi Kristin! Finally moved my google reader over, life has been crazy. I moved up to Vacaville so I'll be running even more races that you will be! I'll be at CIM of course.
