I know you are anxiously waiting my Clarksburg race report. I was hoping to post it with photos from the event but they are not available yet. Anyway, I will post it tonight sans photos.
In the meantime I have another yummy snack to share with you! This is actually the recipe for the smoothie Safeway was serving at Nike Women’s Expo. I am never very good when it comes to making smoothies – I know, I know, they are probably one of the easiest things to make but for some reason mine either end up too runny or too think. I also really liked the mix of fruit in this one.
Berry Good Smoothie
3 cups pomegranate cranberry juice
6 oz peach yogurt
1 cup frozen raspberries
1 cup frozen blueberries
2 cups frozen peaches
Throw it all in a blender, blend, and enjoy! Makes 4 servings.
(I froze the rest for easy to grab snacks for the rest of the week.)
I know I am weird for eating it out of a bowl but it feels more like a meal that way - or even like eating ice cream, frozen yogurt or sobet. Happy snacking!
